My quickest is a warm chicken salad.

I just toss some cooked bacon, a heap of leftover shredded chicken, pine nuts, avocado, red onion, cherry toms, some cucumber, shaved Parmesan cheese over some baby spinach, top with dressing of choice and serve with some warm crusty bread. Takes about 15 minutes allowing for bacon cooking.

    2. Put sausage in bun.

Roast vegetable pasta. Chop an onion, mushrooms, eggplant, zucchini and a couple of tomatoes. Put in oven tray with olive oil and Italian herb mix. Boil pasta. Combine.
