Curried pumpkin soup, then Chinese style cashew chicken and rice. May try to make some steamed sticky date puddings for dessert with caramel sauce. (Wont tell dh its sticky date. He eats and loves it unless he heard what it is)

Can I ask what's in your curries pumpkin soup? I make a Thai one, but would love to try the curried one!

I use pumpkin, potato, zucchini and celery in the soup ( loading up on hidden veggies) then I add some ground cumin and coriander seed, a little but of ground black mustard seed, turmeric, ground chilli if we want it hotter and curry powder. Not sure of quantities- depends on soup volume and taste.

I add a tbsp natural yoghurt to each bowl when served.

if I'm lazy or out of time or spices I add curry powder and some ground chilli powder.
