    I love indian food sooo much. I crave it badly sometimes. Am very picky where I get it from. Will drive half an hour sometimed just to get it frim my favourite place. I lovvveee garlic naan!!!!!

    You're right, you have to know the take aways to know what your getting. Sometimes they don't spice enough sometimes they go overboard.

    I'm fortunate to work with loads of Indian bachelors and forced bachelors whom are constantly seeking the taste of home. When they find something good, they get so excited and we reap the benefits! Mwahahahaha!

    The best ppl to work with!! I sometime tease my husband and ask him why he couldn't be Indian lol. I cant cook it too much because he isn't a fan of it!

    Ok sure! I crap at measuring. I just shake and judge so I'll try give you something to work with.
    Also, instead of using aromatics I put a spoonful of garam masala just before chucking it in the oven..

    Blend the below together:
    2 cloves garlic
    Smallish wedge of ginger
    1/2 tsp chilli powder
    1 tbsp of smoked paprika
    1 tsp tumeric powder
    1 tsp cumin seeds
    1 tsp cumin powder
    1 heaped tsp corriander seeds
    1/4 cardamon seeds from pod (strong)

    Wizz that up until its all mixed together into a dryish paste.

    Now to cook:
    1) fry onions off in oil
    2) add spices to onions and fry off until paste darkens
    3) add chicken thigh (approx 4 large) and lightly brown
    4) add a bit of chicken stock (about 200 ml?) to avoid burning and add can of tomato
    5) add washed basmati rice (1 cup) and stir through until starts to bubble on stove
    6) add salt and pepper (you be the judge) and tsp of garam masala. Stir through.
    7) put tight fitting lid on pot and pop into 180C oven for 35mins

    When you take it out, sprinkle roasted almonds onto (and raisins if you want)

    Waaallla!

    Ps: some recipes do the rice in safron seperately and mix the ingredients later in layers...too much work for me!

    Chicken breast diced, (cooked!) sweet corn kernels, diced bacon, tiny bit of garlic crushed in the rice cooker with water and 2 chicken stock cubes. Delicious!

    Cooking a steak with mushroom sauce & steamed veg for hubby before he goes to work. Ds having a sleepover, so something easy for me. Probably pasta.
