Butternut pumkin 4 medium potatoes one carrot half a cauliflower all chopped one green apple peeled and chopped 1litre or 500 ml of either vegetable or chicken stock depending how much soup you want to make.i put all this into a big pot and boil
Separately I get 2leeks and 4 cloves of garlic diced and browned or softened leave to side until everything else is soft I then put leek and garlic in big pot blend all together with a stick blender add pinch of salt and pepper also half a cup of cream and let simmer add as much cream as u want its delish.!!
Spicy Pumpkin Soup
Butternut pumpkin, peeled and cut into chunks
3-4 celery sticks, chopped
1 onion, diced
Red curry paste
Coconut milk, or coconut flavoured evaporated milk (less fat)
Yoghurt or sour cream to serve
Cook onion, pumpkin, celery and red curry paste until pumpkin softens. Add coconut cream and 2 cups stock, bring to boil, then simmer for 15 mins. Blend with a stick blender, serve with a dollop of yoghurt and fresh coriander.
