    My favourite is tuna, onion, garlic, tinned tomatoes and chicken stock (plus whatever herbs are in the garden - basil works wonderfully well). And of course parmesan cheese!

    Best and easiest risotto I have ever cooked!! It's so yummy, DF and DS request it all the time.

    I don't cook it in two different pots like it suggests.(silly business that is) I use my heavy based lidded pot on the cooktop, do all the steps and then put it in the oven with the lid on. So super easy! And always comes out fluffy and perfectly cooked.
    Try also replacing the sage with thyme and just regular parmesan seems to give a better flavour. If u aren't a fan of artichoke don't add it- it still tastes great.
    We have also added shredded chicken before and it was yummy.
