    Default Your favourite risotto recipe

    I would love it if you could share your favourite risotto recipe with me.

    I have some chicken stock I need to use up, and I thought I would make some risotto...

    The one I do has mushroom, chicken, & can of diced tomato, spinach! With splash of cream and sprinkle of Parmesan

    Thanks joalisha, that sounds yummy! Do you add the tomato at the end, or cook the rice in it?

    Tomato (semi-sundried), bacon and mushroom baked risotto. Additional ingredients are white wine & garlic. Fry everything in the pan, add the stock bring to boil and bake it in the oven for 40min or until liquid absorbed. Stir in Parmesan and fresh basil. Yum yum.

    I do Donna Hays baked risotto but I put my own twist to it - it's so easy!
    It's pumpkin, chorizo and red onion baked for half an hour in the oven

    Oh yum! I've never tried it with chorizo before. I'm thinking we're going to be eating a lot of risotto just so I can try out all these recipes

    Peas lemon and bacon. So good, it needs lots of lemon rind and some juice and it balances the salty and the sweet from the peas.

    Tomato risotto - I just cook the risotto with the chicken stock then add a heap of over ripe tomatoes. Salt and pepper to taste and some Parmesan cheese. Very yummy
