    Default Best recipe for potato and leek soup?

    Just looking at my pantry/fridge, then out the window at the disgusting weather, and trying to think of something to make for dinner without having to go to the supermarket ...

    I think I've got everything for potato and leek soup ...

    I have: potatoes, a leek, onion, garlic, celery, 1L chicken stock, and fresh cream. Is that everything I need? And um ... How do you make it? Just toss everything in a pot, boil, then blend?

    P.S. I also have bacon. Mmmmmmmm. Bacon.

    Default Best recipe for potato and leek soup?

    Hey! My fav way to do it is chop your leeks up fine n slowly cook in butter for around 10 mins until they're soft. You can even put some baking paper over them in pot with lid on, makeshift them meltier. If u want to put onions n garlic in cook them with the leak. Peel the spud n chop up small into 2cm cubes and add, stirring cooking for a few minutes. Then pour in stock n cook until spud are just soft. Allow to cool slightly then blend, season n add the cream. Serve with crispy bacon on top mmmm. That's from my Irish cookbook bible

    Cook everything except cream with a bit of water and chicken stock. Blend in blender. Add cream.

    I have never used a recipe but this is exactly how I've always done it!

    If only it wasn't so hot today I would love a bowl of potato & leek soup!

    So I ended up just throwing every vegetable I had into the pot - potato, sweet potato, carrot, onion, garlic, celery, leek, and then blending it.

    I also found a loaf of garlic bread at the back of the fridge ... Score!

    It was delish!
