    Anyone got any good meal ideas?!
    Something I can make by getting the ingredients easily from the supermarket!
    And something that doesn't need all day prep!

    We had a really nice spinach and avocado salad from the avocado.org website last night, it would be nice with some chicken in it am something crunchy maybe pinenuts?

    My fave for quick and yummy meal:

    Lamb meatballs- So simple, just mix everything in a bowl and roll into balls and pop in the oven: (180 for around 30-40 mins) lamb mince, onion, zucchini, cumin seasoning, lime juice, garlic, egg to bind, salt/pepper.. just add any herbs you like really, making sure you include the cumin as it gives it that distinct flavour- mixed italian herbs, mint, rosemary- most of this I already have in cupboard and just have to by the lamb mince. Takes me around 15 minutes to do and then they cook effortlessly in the oven. I also sprinkle cajun seasoning when turning during cooking. Serve them with Greek yoghurt dipping sauce (add more mint to this & a squeeze of lemon juice & garlic) and a salad- or mash n vegies. Easy peasy!
    (I can't give you measurements as I do it off the top of my head, just add a good amount of everything for nice flavour )

    I made a yummy quick curry last night. Well.. quickish.

    Saute two sliced onions slowly over a low heat with 1/2 tsp salt. Approx 20 minutes. Add 3 tsp coriander ground, 2 tsp cumin, 1 tsp cinnamon, 1/2 tsp chilli. Fry two minutes. Add your choice of meat - a couple of lamb chops is a cost effective option. Brown the meat, then add 400g tin tomatoes and 1 up water or stock. Add chopped potatoes. Simmer over low heat for one hour.
    Add frozen peas, a swirl of yoghurt and serve. Delish.

    Default Ideas for dinner?

    My easy dinner is roasted cherry tomato pasta - cooks in 1 baking dish and you need a pot for pasta - Toss it together and that's it! Add these ingredients to a baking dish;

    3 punnets cherry tomatoes cut
    2 red chilies diced
    4 cloves garlic squished
    Splash of balsamic vinegar
    Salt and black pepper
    1/2 bunch fresh basil chopped ( keep some to sprinkle over at the end)
    Drizzle with a good amount of olive oil (about 1/2 cup)

    roast on low (140) for 45 mins ( or turn heat up if you want it quicker) then add to cooked pasta and grate loads of Parmesan cheese on top!

    If you want to add a protein I've added prawns, crab, chicken or if you wanted bacon or I add prosciutto to DH,s

    I do similar, except add meatballs to the baking dish and put pesto through the pasta- very yummy!
