    Default Throw your carrot recipes at me!

    Today I bought 1kg carrots, forgetting that I bought a 1kg bag earlier this week. So apart from steaming them as a side dish which is what I usually use them for, what can I do with them? Thinking a carrot cake, what else??

    Carrot, beetroot and orange salad
    Carrot muffins- good to freeze and reheat individually

    I add grated carrot to pasta sauces, meatballs, sausage rolls - anything really!

    Also carrots actually last quite well in the fridge, so don't stress too much

    I grate carrot into everything, pasta sauces, curries, lasagna etc.
    You can make "chips" out of them or make muffins or juice them (I put them in with normal fruit juice and you can't even taste it!)

    I love carrot salad!! It's a great alternative to a normal salad with a meal.

    Just grate carrots. Add grated cheese and enough mayo to just lightly coat - i use kewpie... YUM! You can also add currants OR grated apple too, but my DH won't eat it with the sweet stuff in it :-(

    I also grate carrots and leave in a tupperware container (with a paper towel in the bottom) and add to sandwiches, salads and pretty much everything!

    It's a quick and convenient whole food snack for kids - even par boil with some beans and add a bit of maple syrup (my dd loves the sweet little sticks!)

    You could make a pumpkin and carrot soup (with chicken stock, brown onion and cumin and a touch of sour/cream)

    Mmm so many YUMMY carrot dishes!
