    What's your favourite Christmas cookie or slice recipe? Big baking day for me on Thursday but I'm feeling very uninspired.....

    No bake christmas recipes that can be made in advance:

    Rocky Road (quick and easy)

    300g Chocolate
    150g Marshmallows
    2 x Turkish delight bars
    Handful of Peanuts (can be ommited)
    1/3 cup Coconut

    Mix whatever quantities you like and leave in a tray to set, cut with a warm knife.

    Monkey Balls (rum balls without rum)

    1 pckt Milk arrowroot biscuits
    1/3 cup Cocoa
    1/3 cup Coconut (plus extra to roll in)
    1 tin Condensed milk

    Mix all ingredients, roll into balls and roll in coconut and chill.

    Chocolate ripple cake

    1 Pckt Chocolate ripple biscuits
    600ml Cream (whipped with some icing sugar - you won't need all of it)

    Sandwich cream and biscuits together - wrap in gladwrap (moulded into a container) - leave a day or two in the fridge for the biscuits to soften. For an adult version, dip every 2nd biscuit in Baileys or Kahluha.

    Yum!! Thanks. Love the sound of a no bake cake that includes kahlua!

    Googled a cranberry and white chocolate cookie that looks easy too.

    Christmas rocky road.
    Measurements are just an estimate. I'm a toss it in type
    2 blocks of white choc
    1 1/2 Cup of shredded coconut
    Sml bag of pistachios
    Bag of craisins (dried cranberries)
    Bag of marshmallows cut in half

    Combine dry ingredients then add to melted choc. Line a baking dish with glad wrap. Pour in mixture and refrigerate until set. If I have them I sprinkle some silver cachous on top just to look pretty.
    Easy and delicious!!

    I am pretty boring and just make rum balls and shortbread.

    There are heaps of great Christmas recipes on Pinterest though!

    Try this... super easy and soooooo good..

    Caramel Popcorn


    Ingredients

    • 16-24 cups popped corn
    • 1 cup butter
    • 2 cup brown sugar, packed
    • 1/2 cup light-colored corn syrup
    • 1 teaspoons vanilla extract
    • 1/2 teaspoon baking soda
    • 1 teaspoon salt

    Instructions

    1. Preheat the oven to 125 degrees.
    2. Melt butter in 2 quart pan. Stir in brown sugar, corn syrup and salt. Bring to the boil, stirring constantly. Then boil on a low heat without stirring for 5 minutes.
    3. Remove from heat and stir in baking soda and vanilla. Gradually pour over the popcorn mixing well.
    4. Spread the popcorn mixture into the a baking tray that has been lined with baking paper. Bake for one hour turning every 15 minutes. Remove from the oven and break up any large clumps. Cool completely.
