    What is your favourite cheesecake? Mine is vanilla baked but I love ALL cheesecake, seriously lol

    I'm wanting to make one for Saturday night BBQ I have never made baked cheesecake before!

    My MIL used to make a double baked one with sour cream added in the second bake. My golly it was to die for, alas she has lost the recipe but I still daydream about it years later.

    I love love love baked cheesecake! My DP doesnt like cake but my baked cheesecake is his favourite.

    Its quite simple as well but you have to be sure of how hot your oven is as if you cook it too long it will crack.

    This recipe is out of the Family Circle cookbook but hopefully I can type it all in!

    To make base: Brush a 20cm round springform tin with melted butter or oil and line base with baking paper. Finely crush 250g Butternut Snaps and stir 1 tsp mixed spice and 100g melted butter until well combined. Spoon into tin, pressing firmly over base and sides. Refridgerate for 20 mins or until firm.

    To make filling: Preheat oven to 180c. Beat 500g cream cheese (full fat) with electric beaters til smooth (I use the food processor). Add 2/3 cup of caster sugar, 1 tsp vanilla essense and 1tbsp lemon juice and beat until smooth. Add 4 eggs, one at a time, beating well after each addition (now the special bit! I add 3 tbsp of plain flour...it a European thing but helps to make a lovely set cake). Pour over crust and bake for 45-50mins or until just firm (the centre kinda jiggles a little).

    To make the Topping: Mix together 1 cup of sourcream, 1/2 tsp vanilla essense, 2 tsps lemon juice and 1 tbsp caster sugar in bowl. Carefully spread over the hot cheesecake. Sprinke with ground nutmeg and return to oven for a further 7 minutes. Allow to cool and refridgerate until firm. Dont take out of tin until full set.

    You can then put whatever topping you want....some days I put just double cream, some days I do a raspberry coulis as the tartness of the coulis really compliments the sweet. You can even just cut up fruit like strawberries, kiwi, etc and put on top. Its a really versatile cake!

    I use this recipe but I don't bother trying to make it marbled, I usually add some caramel syrup or lemon instead and use butternut snaps for the base

    I also occasionally use gluten free gingernut biscuits for the base with gluten free flour in the mix if I need to make it safe for certain friends/family.

    Ohh, and 1/3 mix makes 6 cupcake sized cheesecakes, great for snacking
