Default Is anyone good at writing letters?

I was doing a apprenticeship and my contract was terminated, before it was terminated my shifts were cut. I spoke to Fair Work Trading and they informed me that I am owed back pay for all the shifts I didn't get, plus one weeks full pay and annual and leave loading. I need to write a letter to my old boss, give her 7 days if I don't have my money then they will get involved.

I'm owed $1737- So I really need help to write this letter.
