    Hi, just wandering if you would be happy to share your favorite fail proof recipes with me. Any recipe from breads to dips to dinner, sauces & desserts, cakes ect, anything that you love and is easy.

    Cooked this the other night without the umami paste and it was delicious

    Chorizio, Potato and Cabbage Soup

    NEED:
    2 Spanish chorizo sausages (as opposed to Mexican!!)
    1 red onion, peeled and halved
    2 cloves garlic
    1 red paprika, deseeded (or red capsicum)
    700g water
    2 tbs Chicken Stock Powder (For Foods Sake recipe)
    1 tbsp Umami paste
    1 tbsp ground paprika
    500g potatoes, peeled and cubed into bite sized pieces
    1 small cabbage, cut into thin wedges (enough for your family, don’t go overboard!)
    400g tin chick peas, or soaked and cooked equivalent
    DO:
    Place chorizo, onion, garlic and paprika into Thermo bowl and chop 3 sec/speed 6. Saute 5 min/Varoma/speed 1.
    Add all remaining ingredients other than cabbage and chick peas.
    Place cabbage into Varoma dish and set into position. Cook 15 min/Varoma/Reverse/speed 1. Set Varoma aside.
    Add chick peas to Thermo bowl and cook 2 min/100ºC/Reverse/speed 1.
    Place wedges of cabbage into large soup bowls and ladle soup over. Sprinkle with chopped coriander, parsley or both.

    This one is great for a quick pasta dish.

    Spicy Broccoli Pasta

    Ingredients:

    2 large heads of broccoli
    4 cloves if garlic
    70-80g of black or kalamata olives (pitted)
    1 tsp of chilli flakes
    1 tbs tomato paste
    salt
    olive oil
    Penne or spiral pasta 200g dry weight (I use gluten free pasta)
    50g Parmesan cheese (optional)
    1/2 a small lemon



    Step One
    Place Parmesan and zest peeled from half a lemon in Thermomix bowl
    Chop on speed 9 for 15 seconds and set aside, don't rinse the bowl

    Step Two
    Chop garlic on speed 7 for 2 secs
    Add olives and chop on speed 5 for 2 secs
    Set garlic & olive mix aside, don't rinse the bowl

    Step Three
    Broccoli florets in varoma - still steamy!
    Heat 1.5 lites of water in TM bowl to varoma temp on speed 1 (from cold this will take 10-11 mins, quicker of you add water boiled from the kettle)
    Chop broccoli into small florets and and finely slice the stem (remove woody end), add to varoma dish

    Step Four
    Once water is at temperature, add pasta to TM bowl with a heaped tsp of salt, add varoma with broccoli and cook on speed 1 reverse for the 8 mins (or whatever the pasta time says on the packet).
    Heat 4 Tbs olive oil in a wok/large fry-pan, add chilli flakes for 1 min, then add garlic/olive mix and tomato paste. Saute on a low heat till pasta and broccoli finished.

    Step Five
    Reserve 1/2 cup of pasta cooking water before draining the pasta and don't rinse the pasta

    Step Six
    Gently toss the broccoli in the olive/garlic mix, add salt to taste and a squeeze of lemon juice
    Add the drained pasta and the 1/2 cup of pasta water and toss till combined
    If the pasta is dry, add olive oil till its well coated

    Serve immediately (optionally topped with Parmesan/lemon zest mix)
    Serves 2-4 depending on appetite!

    Pasta Carbonara

    NEED:
    50g Parmesan, cubed
    1 large brown onion, quartered (200g approx)
    4 cloves garlic
    300g speck bacon, cubed
    200g Swiss brown mushrooms, sliced
    820g liquid chicken stock OR equivalent water and stock paste of choice
    2 tbsp Umami paste
    300-400g long or short pasta of choice (100g per serving is an average!)
    200g cream
    Sea salt to taste (depends on saltiness of your speck)
    Cracked black pepper to taste
    Few Italian parsley leaves and or basil leaves to garnish
    DO:
    Place Parmesan into Thermomix bowl and mill 10 sec/speed 8. Remove from bowl and set aside.
    Place onion and garlic into Thermomix bowl and chop 3 sec/speed 4.
    Scrape down sides of bowl and add speck and mushrooms. Saute 10 min/Varoma/Reverse + speed 2.
    Add liquid, Umami paste, and pasta and cook for time stated on pasta packet 100ºC/Reverse + speed 1.
    Add cream, seasoning and herbs. Serve immediately with grated parmesan over.

    And this one is my kids favorite. Green pasta! I have done it without the basil, without the pine nuts, and without the basil and pine nuts, and it always turns out good.

    Zucchini Pesto Pasta

    INGREDIENTS

    (4 people serving)

    - 300 g Zucchini
    - 40 g Parmesan Cheese
    - 20 g Pine Nuts
    - 1 Garlic Clove
    - 30 g Basil
    - 50 g Olive Oil
    - 100 g Milk
    - Salt to taste


    HOW TO PREPARE THE ZUCCHINI PESTO

    Put pine nuts and parmesan cheese in the bowl. 8 Sec. Speed 8. Put aside.

    Put garlic and basil in the bowl. 2 Sec. Speed 7.

    Add zucchini cut into rounds. 5 Sec. Speed 4.

    Add oil. 4 Min. 100°C Speed 1.

    Add milk and salt. 6 Min. 100°C Speed 1.

    Wait until temperature goes down to 80°C and mix. 15 Sec. Speed 8.

    Add the mixture of pine nuts and parmesan cheese and mix. 15 Sec. Speed 8.

    This is the best butter chicken that I have ever made. I have even done it after marinading the chicken for only 20 mins and it was still fabulous. I leave out the lemon juice, the chillies and the mint.

    Jimmy Seervai's Butter Chicken


    Ingredients:
    140g greek yoghurt
    3cm piece of ginger, peeled
    2 cloves garlic
    2 tbs garam masala
    1 lemon, juiced
    25g olive oil
    1/4 cup coriander
    800g chicken thigh fillets, cut into chunks
    2 tbs ghee
    2 onions
    1 tsp ground turmeric
    2 tbs tomato paste
    2 long red chillies, de-seeded
    260g passata
    300g pure cream
    1 bunch mint
    300g basmati rice.

    Preparation:

    Step 1: Marinade (4 hours prior to meal)
    • place ginger and garlic in TMX, chop on speed 7 for 10 seconds
    • add yoghurt, 1 tbs garam masala, lemon juice, oil and half the coriander. Blend on speed 4 for 5 seconds to combine
    • tip marinade into container, add chicken and cover. Refrigerate for at least 3 hours
    Step 2: Chicken and Sauce
    • preheat a pan over medium-high heat. Remove chicken from marinade and brown in batches, turning each batch for 6 minutes or until cooked through
    • Whilst browning the chicken, prepare the sauce as follows:
      • place onions and chillies in TMX, chop on speed 7 for 10 seconds
      • add ghee, tomato paste, 1 tbs garam masala and turmeric. Saute at 100 degrees on speed 1 for 5 minutes
      • add passata and cook at 100 degrees on speed 1 for 5 minutes with MC lid ajar
      • add cream, mint, and remainder of coriander and blend on speed 3 for 10 seconds
    • reduce heat in pan to medium low. Return all chicken to pan and tip sauce from TMX into the pan with the chicken. Stir to combine.
    • Simmer for 15 minutes whilst rice is cooking

    This recipe I converted for the TMX from a recipe that I got on here.

    Spinach Cob loaf

    Ingredients:
    1 Block of Light Philadelphia Cream Cheese
    300ml of Sour Cream
    1 Packet of frozen Spinach (shredded) (squeeze out the water)
    1 Packet of Spring Vegetable Soup
    1 Tin of Water Chestnuts
    Spring Onions, chopped
    2 cloves of garlic
    2 x Cob Bread
    • Place garlic and water chesnuts in TMX. Chop for 5 seconds on speed 7.
    • Add cream cheese, sour cream and vegetable soup. Mix for 20 seconds (or until desired consistency is achieved) on speed 4-5
    • Add spinach and spring onions. Mix on reverse speed, 10 seconds on speed 4
    • Pull out the centre of one of the cob breads and cut into pieces, place pieces around the side of the hollowed out bread. Put dip into the centre of the bread and sprinkle remaining spring onions on the top. Cut up the other cob bread and place pieces around the side.
