What about vegetarian lasagne? My 20 month old dd loves it and I put all sorts of veggies in it and she always eats a big serve

Veggie fritters? You could grate the zukes and grate or mash the pumpkin, and finely chop the broccoli.

Cook the broccoli and zucchini and some fettucini or any other pasta. Bake the pumkin in bite size pieces and mix together with some feta cheese.

Pakora? Cut into smallish strips, dip in batter then serve with a curry dipping sauce.
