    Default baptism confusion....

I had my ds baptized in the uniting church and they are a pretty easy going Christian church. Maybe look into that too?

    Default baptism confusion....

My DH isn't catholic but I am, although I don't go to church, but we wanted our so baptized so he will be able to go ho catholic school (in our area the catholic school is better the the public). We don't care that he gets taught about the catholic faith as it does have some good values.

We will be doing the same with our DD on the 23rd December.

As catholic you can be baptized by anyone, if need be- say a baby is very ill and in hospital, a parent could themselves or ask a nurse (even if she were not catholic) to baptize the baby.
Doing it at home I'm sure could be done- but I don't know how you'd go about the certificate/documentation.

Also children don't need to be baptized to attend catholic school (maybe this varies depending on which state you live in but in Vic it's definitely not the case.)

    Just something to think about.
This. Infant baptism is not a bible teaching and in fact goes against the very definition of baptism. Plus baptism is a full immersion, not a sprinkling of water

I recommend researching too to make sure you are comfortable with your decision. All the best
