Tuna on rice crackers and some garlic bagels crisps afterwards. Been making cupcakes this afternoon so had to test one for afternoon tea
Rissoles - my secret is loads of eggs. I use 1kg mince, 5-6 eggs, about half cup of fresh breadcrumbs, COOKED garlic and onion, grated carrot, squirt of tomato sauce, Worcestershire sauce, salt and pepper. Should be really sloppy. Then make into rissoles shape and dust in flour, fridge for 30 mins. I cook in a frying pan with lots of oil and lid on.
Then I make a gravy by putting flour in the pan the rissoles were cooked in, cooking it out for a minute then add 2 cups beef stock, balsamic vinegar and Worcestershire sauce. Then return rissoles to pan and let them cook in the gravy for a bit.
DH says my rissoles won his heart.
Men. The way to their heart is certainly via their stomach!
