    Or my very easy chicken & corn soup

    fry 4 spring onions (chopped) in a little bit of oil until soft. Add 2x cans of creamed corn, 1 can of drained corn kernels and 3 cups of chicken stock. Bring to boil. Add 1 or 2 diced chicken breast pieces, and cook for further 5 minutes. Serve.

    Quick, easy and delicious

    Apricot chicken! Chicken (pieces or breast) 1packet of French onion soup and 1 tin of apricot nectar. You can also add carrot, or watever vegies you have. Bake until chicken is cooked and serve with rice. Yum!

    Spinach pasta! Fry diced onion and garlic until soft add a packet of frozen spinache and a small jar of cream serve with pasta

    Chicken parmigiana bake. Fry some chicken breast (thinly cut) in a pan until just brown. Layer tomato passata, chicken and grated cheese. Finish with grated cheese and a sprinkle of breadcrumbs. Cook at 180c until cooked - maybe 30 mins. Really easy and yum.

    Sao quiche:
    8-9 Sao Biscuits, crushed
    3 eggs
    1cup milk
    3-4 bacon rashers, diced
    2cups grated cheese
    1cup grated carrot
    1onion, diced

    Place saos, bacon, carrot, onion and 3/4 of cheese in a bowl and mix together. Beat eggs and milk together. Add to Sao mixture. Stir together well.
    Place mixture in a LIGHTLY greased baking dish.
    Bake in mod oven 200c (185c fan forced) or approx 350f for 30 mins to 1 hour. Make 4 to 6 serves and it is sooo yummy!!
    Lol the saos aren't there after cooking. It's great and your kids will love it!

    This is how I make my apricot chicken and its been a favorite of our families since I was a kid! I love mine with mashed potato and heaps of steamed vegies

    Mmmm this thread is making me hungry! Time for dinner I think!

    I'm making an easy meal tonight. Cheesy tuna veg pasta. Fill a saucepan with pasta (best with the large spirals) and chuck in diced vegies (grate them if your child is a fussy eater), boil til cooked. Make up cheese sauce - melt 2 tbsp of butter, add 2 tbsp of flour, and then gradually add milk to the mix until smooth and decent consistency. Add a handful of grated cheese, mustard and pepper to taste. Drain pasta and vegies, mix with cheese sauce, and add a can of tuna.
