    Default Recipe ideas - I need inspiration please for chicken thighs

    Hi everyone

    I'm doing vegie patties tonight with leftover vegies and have some chicken thighs out to have with them but I'm stumped as to what to do with the chicken?

    Does anyone have any ideas?

    Make schnitzels

    Stuff with brie cheese and wrap in bacon

    Yummiest and easiest thing ever. Teriyaki chicken. 1/4 cup soy sauce, 1/4 cup balsamic vinegar, tsp garlic, tsp ginger. Brown the chicken lightly then pour sauce over it and let chicken cook in sauce. Always comes out so tender and really yummy just served with rice.

    Thanks for the suggestions everyone

    I've gone with a marinade of some description - aka open fridge and throw stuff in a bowl LOL. Will see how it comes out but I think I'll be trying that teriyaki chicken one!

    One of my favourites - and really easy - is; 1 cup fresh lemon juice, zest from half a lemon, 1 clove crushed garlic, 2 sprigs rosemary (or dried equivalent). Combine all ingredients in a bowl and marinade chicken for 30-60 minutes. Put a small amount of olive oil in a backing dish and bake at 180 for approx 40 minutes or until cooked.

    It comes out really nice and moist and the flavours go with just about any side dish.
