A "spare $1000"??? almost unheard of in my world. Anyways:
Credit card - although it would only be a small dint.
    Bills
    Bills
    Car repayments
    Bills
Rent/mortgage - extra repayment or rent credit
    Buy a pretrol card
Start a trust fund for DD in a high interest account
    DD's schooling
Chuck it in a high interest account and dont touch it.
    Did i mention bills?

This is just me but i would NEVER spend that much on myself on "stuff" like clothes, dinners, facials ect.

I'm in a similar position in that I'm getting a very nice tax return this year (didn't claim the tax free threshold as we knew we'd need some spare $ this time of year) 5k is going on the mortgage, 1k on baby gear and the final 1k is going on a dyson and a few new pairs of shoes

In my current position: use it to help pay debts. We owe my grandmother $1000, my dad $750 and we have a $2600 conveyancer bill....

Without those bills however... I'd probably book a hotel for a night or 2 and just enjoy a weekend away. Dinners out, spot of shopping, massages

For us it would go into one of the home 'projects' we are doing/planning and would allow us either another $1000 to add to the budget or would let us keep an extra $1000 in savings.

In your position I would either be practical and put it in the bank to use down the track when you do 'need' something or else as others have suggested split it up between you and DP (Maybe even a little to the kids or do something as/for the 'family) to spend as you wish.
Or maybe both. i.e put $500 in the bank. Then with the other $500 go to a movie or out to dinner as a family then split the rest amongst you.
Have fun deciding what to do I wish we were in your position
