    Default Yummy quick dinner recipes?

    Hi ladies,

    Im looking to expand my dinner recipes and am looking for quick easy meals to feed my family.
    I have googled but some meals on there are just ridiculous!

    Could you please give me your BEST recipe? Hopefully I can make something new that we will love!!!

    I will give you mine.

    Chicken schnitzel
    2 large chicken breasts
    2 cups breadcrumbs
    1 egg
    1 cup water
    1 cup plain flour


    Slice chicken brest into schnitzel portions.
    Place egg and water in bowl and whisk till combined.

    Cover chicken slice in flour, dip in egg then cover with breadcrumbs.

    Pan fry until golden brown and serve with mashed potatoes and pumpkin

    Fish tacos - I make these in 15 mins start to finish;

    Cube white fish ( I use cod) and marinate in olive oil, lime juice , cumin, paprika, fresh garlic, coriander seeds and pepper , set aside

    Make guacamole - 3 avocados, lime juice, salt, fresh coriander and dash sweet chili sauce - mash all together until smooth

    Heat oil in hot wok
    Cut up tomato
    Shred lettuce
    Grate cheese ( I use just tasty)

    Stir fry fish until cooked on high heat ( no longer than 3-5 mins) throw in a heap of chopped fresh coriander at the end

    Put the fish and all other items in bowls so everyone can make their own - serve with taco shells or if I plan ahead I make fresh tortillas

    Or our other quick dinner is mirin glazed salmon fillets - start to finish 20 minutes

    Marinade;
    1/4 cup mirin
    1/4 cup light brown sugar ( or maple syrup)
    1/4 cup soy sauce ( or tamari)
    Marinate fish for 5 mins or longer if you have time!

    Put the rice on ( or noodles) get some baby spinach leaves out and heat up a fry pan with oil

    I always cut the thick salmon fillets in half and serve 2 halves, cooks quicker this way! Fry fish for literally 2 mins each side until cooked ( add the rest of the marinade when you turn the fish as it gets thick and syrupy )

    Place rice/noodles on your plate, top with baby spinach leaves and place the salmon on top , the heat from the rice and fish wilts the spinach, then pour over the syrup left in the pan!

    Creamy chicken potato casserole
    1x BBQ chook
    1x bottle of cream
    Mix of sweet potato and normal potato
    Cheese
    Paprika

    Slice potatoes, pull chicken apart,
    Layer in casserole dish tip
    In cream cover with cheese and season with paprika .... Put in oven till
    Cooked ...
    Serve with veg or salad.. ;-)

    Chicken teriyaki

    500g chicken thighs
    3 tbsp each of soy sauce (use kikkoman brand), sake and sugar
    2 tbsp mirin
    Corn flour

    Cut any yucky bits off the chicken thighs, cut into 3 pieces each and dust in cornflour. Fry in frying pan with a little oil until sealed. Add remaining ingredients, simmer with lid on 5 mins then lid off until sauce is sticky. Serve with rice and a salad or wilted spinach.

    If you like this one I also do Oyakodon but I'd have to get the recipe for that

    When you make schnitzels, put some all purpose seasoning in with your breadcrumbs - it is seriously delicious!!

    Special Chicken Salad:

    Chop up chicken breasts into smallish pieces. Put a little oil on them and coat with all purpose seasoning. Then pan fry until cooked.

    Serve with a salad.

    Chorizo pasta:

    2 pack of Chorizo sausage (cold meat section, primo brand is best)
    Spinach and ricotta ravioli
    Good quality tomato pasta sauce
    Baby spinach leaves
    Parmesan

    Put water on to boil, slice Chorizo, put pasta in boiling water to cook for recom time (usually 5 mins) panfry Chorizo in olive oil until browned, add spinach leaves and pasta sauce, turn off heat and mix with drained pasta and serve with pepper and parmesan! Super gourmet and YUMMO! My 2yr olds fave pasta dish. I add olives to his cos he is obsessed them :rollseyes:

    Sausage hotpot

    Basically you cook onions, sausages and then stir in can of tomatos, frozen veggies and a cup of rice along with some stock. Alow to cook till rice is cooked, cut sausages into pieces :-)
