Default Teach me to bake! Please...

I'm serious my baking skills are non existant.

Basically I would like to bake something for DD to take to school for morning tea and that my 2 year old can also eat.
Some type of slice or bar or something along those lines.
I don't mind if it has a bit of sugar (I use brown sugar).

    Any ideas?

A really failsafe scone recipe is 300ml of cream and 2 cups of flour. Mix it up and either score a pressed out dough or cut into rounds. Bake for about 15 mins.

    Have a look on taste.com.au.

Or google 5 minute chocolate coconut slice. You can't go wrong with a melt and mix slice recipe.

Probably start with slices, biscuits, erc rather than cakes as cakes are more technical.

    Yep.

I was entirely skeptical at a scone recipe without the rubbing etc. but it works. Creates the same texture dough and they taste lovely.

I'm a terrible baker and made biscuits for the first time yesterday which were super easy and taste fabulous. 2yo DD and DH scoffed them down.

    Chewy Oat & Sultana Biscuits

Makes 12 regular or 16 bite sized

    - 3/4 cup wholegrain rolled oats
    - 1/2 cup plain flour
    - 1/2 cup wholemeal SR flour
    - 1 cup cornflakes
    - 1 cup sultanas (or raisins)
    - 1/4 cup brown sugar
    - 1/4 cup oil
    - 1 Egg
    - Honey for drizzling

    1. Pre-heat oven to 180'C (fan forced) and line baking tray with baking paper

    2. Add all 'dry' ingredients to bowl and combine

    3. Add oil, egg and 1/4 cup cold water to a jug and whisk together

    4. Pour 'wet' ingredients into 'dry' and stir to combine

    5. With floured hands, roll mixture into balls and place on tray, flattening slightly.

    6. Bake 12 - 14 minutes or until golden. When almost cooked, remove from oven and drizzle honey over the top of biscuits, then put back in oven for a minute. Remove and cool on tray.

I find the thing with baking is if you follow the recipe, most of the time (depending on your oven) things will end up overcooked. A friend taught me that despite 'they' say you shouldn't open the oven, you have to check it regularly and poke it. The second that skewer comes out clean take it out!!

    Try these recipes
    http://www.taste.com.au/recipes/22346/anzac+slice

    http://au.lifestyle.yahoo.com/food/r...coconut-slice/

Both super quick, easy and yummy.

Best tip I can give you is to get to know your oven. Mine is fan forced and I have to set the temperature 20-30 degrees lower than the recipe says otherwise everything burns. Mine also concentrates heat in one corner, so I need to spin the trays around halfway through the cooking time so things bake evenly.

    Enjoy!
