I also make a Toad in the Hole with mince (DP and I dont like sausages) - Pork mince, add crushed garlic, fresh thyme, salt and pepper and roll into balls. Fry them off in an ovenproof dish till browned and then pour over your yorkshire pudding batter and chuck her in an oven for 40 mins at 220 degrees..Amazing!
They both sound great! Thank you!

    Sure thing

    1/2 cup packed brown sugar
1/2 cup tomato sauce (I half halved tomato paste and pizza base sauce in here to)
700g lean mince (I usually do half beef and half pork and veal mince)
    3/4 cup milk
    2 eggs
    1 1/2 teaspoon salt
    1/4 teaspoon ground black pepper
    1 small onion chopped
1/4 teaspoon ground ginger (this is on the recipe but I've never put this in)
3/4 cup finely crushed water crackers (I usually use saladas)

    - Preheat oven to 180 degrees C. Lightly grease a 13 x 20cm loaf tin.
    - Press the brown sugar in to the bottom of the loaf pan and spread the tomato sauce over the sugar.
    - In a mixing bowl, mix thoroughly all remaining ingredients and shape in to a loaf. Place in tin on top of the sauce.
    - Bake meatloaf for 1 hour or until juices are clear.

It's my all time favourite meatloaf recipe. I hope you like it to
