Subscribing! Waterlily, your pizza scroll recipe was missing the flour - just had flour for dusting?

    90g butter
    160ml (2/3 cup) oat milk
    Plain flour, to dust

    Topping

    Tomato paste
    Garlic
    pineapple
    Onion
    Zucchini
Pre grilled sweet potato and pumpkin
    Italian herbs
    Dried chili flakes
    Nutritional yeast (a huge sprinkling)

Preheat oven to 210°C. Line a baking tray with non-stick baking paper. Sift the flour and salt into a large bowl. Use your fingertips to rub the butter into the flour it goes like breadcrumbs. Add the milk.
With a butter knife cut it through until evenly incorporated and the mixture begins to hold together.
Turn the dough onto a lightly floured surface and gently knead until smooth. Use a lightly floured rolling pin to roll out.

At toppings, roll up and cut.
Place scrolls (touching each other) on a tray with baking paper and took for about 25-30 mins.

    Chia pudding is extremely yummy!!

    1/4c chia seeds
3/4c desired milk (I use almond milk)
1tbl (to taste) sweetener we use raw honey
Soak over night and it will gel up like porridge
Add fruit, coconut yoghurt, cocoa to make it like a chocolate custard... Drizzle with maple syrup or more honey.. Although honey isn't vegan, you can use Agave or sugar if you use sugar.

I am ADDICTED to the website "Oh She Glows". My DD especially likes 'Our Perfect Veggie Burger' in the 'Dinner' section.

Other than this I make a huge pot of soup once a week which she never gets sick of.

    1 Tbs olive oil
1 or 2 cups of lentils
    1 or 2 celery sticks
    1 or 2 carrots
    1 onion
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    pinch ground chilli/flakes
    veggie stock and water

Wash lentils. Sweat the vegetables for a couple of minutes then add spices for 30 seconds. Add lentils and as much water and stock as you want. Cook for about 10 minutes. Super easy, healthy and really yummy.

Sometimes I omit the spices, add grated zucchini and a tin of crushed tomatoes with veggie stock to taste.
