I know you're vegetarian, so you van just exclude the meat (and use vege stock instead) but I make this soup regularly, either with chicken or beef, and sometimes just veges.
Potatoes (not peeled) diced, pumpkin, carrots, leek, zucchini, celery, meat, all placed in a big saucepan. Dollop of margarine and garlic on bottom. Sprinkle with pepper, curry powder, mixed herbs and bay leaves. Heat saucepan and mix until margarine melts. Turn off heat and then add in beef and vege stock (or chicken stock) and bring to boil. Let soup boil for 5 minutes, then simmer and add tinned tomatoes and red kidney beans. Bring back to boil and add peas.
Soup should be ready to eat.
