    cauliflower and bacon soup

    Saute finely chopped short cut bacon til cooked
    Add one onion finely chopped and 2 garlic cloves finely chopped
    Stir until translucent (no browning)
    Add 1/2 finely chopped cauliflower and sweat it off for a while
    Add 4 cups of stock (I use chicken)
    Cook on low heat for an hour or so
    check for seasoning
    Add chopped parsley to serve

    YUM!

    Jamie Oliver's chickpea and leek soup (google it)

    We call it "war soup". I made it once and asked DH if it was nice. He said "yes, yes, but it's like something I'd expect if we were at war.


    Also Nigella's corn chowder is super easy and quick.

    And also bacon, lentils, carrot, potato, celery. Dice finely, Cook in stock Don't blend it, add a few spoons each brown sugar and white vinegar.

    sweet corn chicken soup

    5 cups water
    2 chicken massel stock cubes
    bbq chicken diced small (2 cups)
    tin of creamed corn
    2 eggs
    2-3 dessertspoons corn flour

    place water and stock cubes into saucepan and heat till stock cubes dissolve
    remove half cup of stock for thickening later
    add diced chicken and can of creamed corn
    stir the corn flour into the half cup stock you removed earlier and slowly pour into stock chicken and creamed corn mix while stirring slowly.
    bring to boil and remove from heat and whisk (with fork) the 2 beaten eggs and some cracked pepper

    so yum!!

    Tomato, white bean and sausage soup - very hearty!

    6 sausages, cooked and sliced
    1 fennel bulb, sliced
    1 red onion, chopped
    2 cloves garlic
    150g bacon, chopped
    2 tbsp tomato paste
    400g tin tomatoes
    2x 400g tin butter beans, drained and rinsed
    2 cups chicken stock
    100g baby spinach

    Heat 2tsp olive oil. Add fennel, onion, garlic and bacon, cook for 5 mins. Add tomatoes, beans, stock and 2 cups cold water. Cover. Bring to boil, reduce heat and simmer uncovered for 10-15 mins. Add sausage and spinach for 1-2 minutes. Eat!
