    Default Soup recipes thread

    Coming into winter, I wanted to make a soup recipe thread. What are you fave soups, and how do you make it?

    Pumpkin and Lentil Soup
    1 large pumpkin
    1 tin of lentils
    2 cups of water
    Chopped chives to serve

    Chop pumpkin into small pieces. Add pumpkin, lentils and water together in slow cooker. Leave to cook on low for the whole day. Use a stick blender through the slow cooker to puree. Serve topped with fresh, chopped chives.

    I have been making this one recently:

    - onion
    - carrots
    - ginger
    - celery
    - red capsicum
    - water and stock powder

    Throw it all in slow cooker and then puree. It's quite zingy.

    Someone posted this one last winter and it become a family favorite here

    slow cooker chicken corn soup

    2 chicken breasts diced
    2 tins of creamed corn
    2 ltrs of chicken stock
    2 pkts of 2 min noodles crushed
    and 1 onion.
    cook on low for 6 to 8 hrs


    My favourite is

    Roast pumpkin and bacon soup

    in large roasting dish cook
    1/2 a pumpkin than cover the pumpkin with
    1 diced onion
    2 good hands full of diced bacon
    2 cloves of diced garlic
    a good shake of paprika
    Once cooked if like a super thick soup like me just puree and add a dollop of cream. If you like you soup thinner like Dh add some chicken stock to taste.



    The other we do a lot is the end of the week soup.
    One finely diced steak
    2 tins of tomato
    mixed herb and spices to suit
    what ever veggies that are in fridge. (diced)

    Toss it all in the slow cooker with water, add alphabet noodles to make it fun.

    Again, toss it all in the slow cooker with water and leave to cook for the day. Add basil to serve.

    1 whole chicken (or 4 maryland pieces)
    1 onion diced
    3 carrots peeled and chopped
    4 peppercorns
    2 bayleaves
    salt
    40g butter
    40g pl flour
    1/4 cup cream

    Place chicken in a large pot with onion, carrots, peppercorns and bayleaves. Cover with water boil until chicken is cooked.
    Remove chicken from pot and strain broth. melt butter in a pot and add flour. cook until it comes away from the sides. Whisk in HALF the chicken broth and continue to whisk until it thickens. Place veges (that you strained out) and remaining broth into a blender and blend til purreed. Add blended mix to thickend broth and simmer until right consistancy.
    Remove cooked chicken from the bones and add to the simmering broth. season with salt!!

    Serve with a little fresh cream

    YUMMO...cream of chicken soup!!!!!

    My partner is a professional athlete and I have a great weight loss soup recipe for when he needs to cut weight-
    Sauté onion, garlic, carrots, celery, whatever other non-starchy vegetables together in some olive oil. Add half salt-reduced, half ordinary chicken stock. Bring to the boil, add whole chicken breasts (though thighs are more yummy, they are more fatty), and leave to simmer for about 15mins. Take out chicken and dice or pull apart, add back to pot with some fresh corn removed from the cob, simmer for 5 mins then serve. Delicious, quick, healthy.

    Cream of Zuchini - takes about 20 minutes ...

    Chop 3 medium zuchini and 1 onion, fry in a little olive oil and butter until browing.
    Just cover with water and add 2 veg stock cubes, (salt and pepper if you want) gently boil for 10 minutes.
    Puree with a stick blender, add 1/2 cup cream and reheat (don't boil).

    That's it! My two year old loves it.
