Sundried tomatoes, olives, feta cheese, salami.
Chargrilled red capsicum, baby rocket leaves, potato cut into small pieces & prosciutto.
Adding basil pesto to sandwiches is great as well.
Although I realise it seems crazy to use a recipe for sandwiches, but once I did actually use one when I made sandwiches to take to a family lunch. They were a huge hit and it's actually really handy to have the recipe so that you get the proportions of ingredients right. A couple of my Aunts even asked for the recipe, that's how much they liked it. Here it is:

Hi there, Congratulations on getting your DS baptised! I'm not sure where you live, but if you are near a Woolworths, you might want to take a look at the Always Fresh Sandwich Fillers (they are in little tubs near the small goods section). I had to make a bunch of fancy sandwiches for a party recently and used the sandwich pastes - I used the Tandoori flavour paste and just added rocket lettuce, and then I used the Curried Egg flavour with shredded iceberg lettuce. Anyway, they were very quick to use - I made 50 sandwiches in less than half an hour - and the sandwiches looked and tasted very fancy! (If you have - or can borrow - an electric knife that makes the process even faster!) I haven't tried any of the other flavours so can't really make a recommendation on them.

Roast vegetables
shredded chicken, mayo, slivered almonds and finely chopped celery (mix it all up in a bowl and spread on)

Hmmm, that's all I can think of at the moment.
You need to have curried egg sandwiches. It always seems to appear on sandwich platters. My advice is to stick to plainer sandwich like the ones suggested above. I wouldn't go adding mustard or things like that-there is nothing worse than biting into a ham/cheese sanga and getting that awful mustard taste. Lol
Haloumi is another great thing to add to sandwiches! Yum, yum!
