    Lunch was a toasted sandwich with chicken, cheese, avocado, sun-dried tomato and spinach. And today's baking - I used last nights left over roast chicken and made a quiche with sun-dried tomato, bacon and spinach

    Here's tonight's dinner, curried lentil and rice casserole. It's not pretty, but it is simple, wholesome and most importantly liked by DD!

    Home made spring rolls. Baked in the oven, NO fat or oil!! Yum!

    And fried rice with a honey,soy and garlic sauce. Very delicious dinner.
