Grilled steak with greek salad.
So much good food guys, well done! DH and I went out to celebrate our BFP tonight, I had intended to take a pic but forgot when I saw my food...it was grilled dory with chips and salad...so beautiful!
Think I might try the chocolate mug cake tonight for pre-bed snack time!! =D
We planted a veggie garden recently and I have a Lebanese eggplant almost ready, plus 2 jalepeno chilies! Can't wait to use them in something. I used some of the basil yesterday, I love stuff from the garden. So excited to use more! Here's our veggie patch:
1 tbs oil
2 onion, finely chopped
1 kg beef mince
600g jar taco salsa
1 sachet taco seasoning mix
6 Burrito Tortillas
450g frozen spinach, thawed
1 cup grated cheese
1. Preheat oven to 200 degrees. Cut tortillas in half and set aside. Heat oil in a large heavy-based pan. Cook until onion is tender, then add mince and cook till well browned. Add 2/3 of the salsa and sprinkle taco seasoning mix over meat. Stir, bring to the boil, reduce heat and simmer for 10 mins.
2. Brush a square dish with oil (I use a pie dish because its round and we dont do a full batch of this as its just DP and I to feed). Place a little meat sauce in base, lay 4 tortillas in the dish, cut side against the dish, layer more meat on top, sprinke some spinach over the meat and repeat the process ending with tortillas on top.
3. Spread remaining 1/3 salsa evenly over the tortillas, sprinkle with cheese and back for 25-30 minutes or until cheese is melted and brown.
You can serve this with salad or veggies or even on its own..Enjoy!!!
