You just beat the egg white until it forms those small peaks - then gradually add the caster sugar until its glossy (you don't have to use raw - I just wanted to). Then in oven On baking paper @ 150 deg c for about 20 mins... Much easier then I thought!!!
That's just for a mini - I'm pretty sure the big pavs use cornflour or something.
