    It is yoghurt cheese. So they hang Greek yogurt up for a few days and it turns into a cheese. It is thick but really light and low in fat. I have made it once but buying it is so much easier sometimes. It goes really well with avocado. (well I think )

    Oh and when it is hung they add herbs to it for a nice subtle flavour. The one I have at the moment is the Egyptian Dukka flavour.
