    This thread has encouraged me to eat healthier. We did our weekly shopping today and spent $40 on vegs and fruits, normally just around $10-$20.
    Question ladies, for a simple salad of cucumber, tomato, spinach, carrot, mushroom, cheese, what kind of dressing should I use?

    LOL well, our rule when I became veggo (for health reasons) was if you want it you cook it! So far, he has actually admitted to liking the food we eat! The more I go without meat, the less I cope with the smell/texture which surprised me. We will have to share some veggo meal ideas on here =) im making mushroom tangine tomorrow so I'll take a pic =)

    Same! That's why I'm doing it as well
    My fave dressing at the moment is balsamic, olive oil, lemon and pepper, sometimes with a squeeze of low fat mayo if i want it a big creamier
