We are having mexican enchiladas for dinner tonight with cheesey mash and honey carrots. Feeling lazy today so it's nothing special!

We had chicken Marylands that had been marinated in preserved lemon, olive oil and herbs with Parmesan mash and steamed greens.

Will definitely do it again. But roast the chicken longer so it really falls off the bone.
