    Default Urgent! But not dire.

    I'm baking an egg-free cake for DS to take to CC tomorrow. I can't get the no egg to behave like egg. How much water/no egg do I use to stiffen with caster sugar. Gah, this will take all night

    No idea but if you have troubles I have an egg free choc cake recipe I can send.

    I don't bother with no egg way too many strange ingredients. Hahah.

    No egg is crap and really does have some strange ingredients. I use 1/4 cup of apple sauce or a ripe banana to replace the egg. Otherwise I make vegan cakes The vegan cakes turn out the best IMO

    Thanks guys. Problem is the cake needs to be made now and i have the ingredients I have. Am going to make a chocolate cake with the no egg and cross my fingers!

    Ive been trying to use no egg and egg like with little success for about 15 years!

    Next time give this a shot -

    Sift together
    1.5 cups plain flour
    1 cup castor sugar (I use less though)
    3T cocoa
    1t bicarb

    Make three wells in dry ingredients, place one of these in each well
    1t vanilla extract
    1T white vinegar
    6T veg oil

    Pour 1c cold water over and combine.

    Bake at 180 until a skewer comes out clean. Makes great mini muffins, cupcakes, big cakes - anything!

    Ive made this probably over 100 times, perfect every time

    it turned out ok. main issue is my oven, which has two settings. Off and scorching so it was a little burnt around the edges. But it tasted ok! the recipe just called for 2 eggs so i used the equivalent no egg. I guess it's unpopularity is why it's hard to find, i went to 3 supermarkets. Funny, i used to babysit an allergic boy and we used to make cupcakes and muffins with it all the time.
    bada that recipe looks nice and simple and uses regular ingredients. One egg free recipe i found online was full of stuff i've never heard of!

    Anyway, I was only baking it because there's an allergic kid in the kinder room at DS's CC, so it won't be too often i'll be needing to make egg-free stuff.

    Phew, I hate baking. I needed a shower and a glass of red wine after last night's effort!
