    Default what's your fav diabetic dinner?

    I only have 7 weeks to go till bub arrives and I have reached my limit with the same old boring food for my GD

    Hi, I had GD with both my pregnancies, I felt amazing the whole way through it is such a great way to eat and I lost a kilo a week eating that way! My favourite is Satay Chicken taken from Diabetic Living magazine. You use Doongara Clever Rice, skinless chicken, and for the sauce it is a clove of garlic, 1 tsp cornflour, 125ml skim milk, 2 tbsps light smooth or crunchy peanut butter, 2 tsps sweet chilli sauce, pinch of curry powder and 2 tsps balsamic, whisk over low heat- taste lovely!

    This isn't specifically a dinner meal, but rather an accompaniment - I like to get Tilda brown basmati rice, which is already cooked. Just heat it in the microwave for two mins and then mix in a bit of Wattle Valley dip (the Chilli Red and the Basil ones are my favourites). It makes the rice taste great and it never gave me any high readings. I'd usually have it for dinner with some lean meat and vegies or for lunch with salad & tuna, or something like that.
