    I just use a simple recipe.

    Onion & garlic sautéed in olive oil for 3 mins on 100 degrees speed 1.

    Then add whatever veggies you like- today I used broccoli, cauliflower, carrot, potato, celery. I put in some tofu too.

    Add one can of coconut milk (I used light organic coconut milk).

    And 2 big tablespoons Thai green curry paste.

    And cook at 100 degrees reverse speed 1 for about 15 mins.

    I've done it like this a few times now as its just so easy and so yummy.

    Not boring! The mushroom risotto is one of my go-to recipes. It always turns out SO good. Let us know how it goes as arancini! How do you coat it?

    Well im going to use breadcrumbs but im wondering if it will even work its a bit wet iykwim. But you are right soooooo nice. Hmm I'll let you know. Might do it tomorow I just pigged on spelt pizza and now cant move haha

    I made quirky cookings fried chicken the other night and OMG it was awesome! So crispy! I just milled 250g of brown flour and added some paprika and salt to the rice flour. I dunked the chicken in egg and almond milk mix and then into the flour and fried it off in coconut oil. Turned out perfect.

    Maybe you could use a similar coating for the arancini?

    I coat my arancini in cracked wheat (burghul?) it's a very crunchy coating and you need to get used to it- but healthy and tasty.

    Today I tried the 30 second orange cake but altered a few things as I ran out of sugar lol, it's still pretty good but I'm sure it's much better when you stick to the recipe more. Also the oranges I used were a bit tangy/unripe so I would recommend nice sweet juicy ones!

    I also made hommus. Hommus goes very fast in this household, this is my second batch this week!
