    Default share your fav salads

i love salads this time of year but always end up just having boring lettuce/tomato/cucumber, sometimes carrot/avacado. i want to do some yummy ones for xmas but other than the above and potato salad, i have no ideas.

    whats your fav salad?

ETA i dont mean a 'meal' salad like thai beef salad but a side dish thingo

How about a pumpkin, pinenut & spinach salad? Cut up the pumpkin into cubes and roast it til golden.

Add some balsamic vinegar and a tiny touch of oyster sauce and It's super easy & delicious.

Another really yummy one which always proves popular is an Asian noodle salad- u can buy the packs of noodles and the dressing pre made- u just need red cabbage and some
    Onion.

Oh an u can't go past a coleslaw for Chrissy.

Waiting on a miracle- due 1st August 2012! Mum of 2 year old little girl & 1 Angel Baby August 11 x

    Beetroot Salad:

    - Rocket
    - Whole baby beets, halved
    - 1 lemon rind
    - 1 large handful fresh parmesan, coarsely grated
    - 1/4 cup olive oil
    - 1/4 cup raspberry vinegar

    Add dry ingredients in bowl.

Mix oil & raspberry vinegar together and add to salad slowly, add enough so salad is just dressed, not too wet.

This is delicious and perfect for summer.

    Broccoli & Bacon Salad

    - 3 heads of broccoli
    - red onion (to taste)
    - 3-5 rashes of bacon
    - can also add pine nuts or sunflower kernels (or other type)

    Dressing
    - 3-4 tbs mayonnaise (whole egg best)
    - 1 tbs vinegar
    - 1 tsp caster sugar

Fry off bacon while steaming broccoli. Mix mayo/vinegar/sugar together and then combine all ingredients and sprinkle with nuts if desired. Serve warm or cold.

It's delicious and everyone loves it! I've even had people that don't normally eat broccoli go back for seconds 

I call this Mexican salad , it's not very Mexican but we had it in LA at a Mexican restaurant and I copied it-

    chop everything into small cubes
    2 granny smith apples
    bunch broccoli , flowerettes only
    bunch cauliflower, flowerettes
    1 big carrot
    1 stick celery
    Small red onion
    Handful fresh coriander chopped
1/2 cup freshly grated extra tasty cheese
Put all in a bowl and add splash of olive oil, squeeze of lemon and loads of white balsamic vinegar, it has the best flavor and is nice and crunchy with the raw veggies and white balsamic is sweet but still has a tang!
