    Default Gingerbread recipe

    Does anyone have a delicious gingerbread recipe I can make with the kids for Christmas? I promised DD1 we would make some on Christmas eve. But the one we have made in the past seems a little 'spicy', maybe the ginger? So I thought I'd see if anyone had some tried and tasted yummy recipes.

    OK...

    125g butter
    1/2cup lightly packed soft brown sugar
    1/3cup golden syrup
    1 egg
    2cups plain flour
    1/3cup SR flour
    1tablspn ground ginger
    1teaspn bicarb soda

    Preheat oven to 180c and line 2-3oven trays with baking paper

    Using electric beaters, beat butter, sugar and syrup until light and creamy. Add egg and beat well

    Transfer mixture to a large bowl and sift in flours, ginger, bicarb. Fold with knife till just combined

    Knead dough gently into a ball on a well floured surface (don't over handle)

    Lay out a sheet of baking paper on a chopping board and roll dough to desired thickness (about 5mm)

    Refrigerate dough on board for 15mins till firm, cut into desired shapes and transfer to baking trays

    Bake for 10mins or till slightly brown, cool on trays, then decorate with icing if desired

    My kids love this one... its not too gingery- but the golden syrup gives it a lovely taste
