    Default Best quick easy dinner (no chicken)

    I'm tired, I've been at work, there's nothing in the cupboard.

    What can I make for dinner that's quick and easy? I'm happy to go down to the local shop - they have heaps of fruit, veg, meat, deli, etc.

    It's very warm weather today, so nothing that needs a lot of cooking or is too wintery.

    And no chicken. I'm so sick of chicken.

    What do you suggest?

    Burritos - lettuce, tomato, cheese, avocado, refried beans, salsa and strips of cooked beef, lamb or chicken (I prefer chicken but any meat works).
    Mum to 3 gorgeous girls;
    DD1 10yrs DD2 8yrs
    DD3 4yrs!!

    Tuna Pasties? Super easy, and yum. I think I might make them tonight, I'm not feeling too good.

    Tuna, Cheese, onion, sweet chilli sauce (and mayo if you want). Mix it all together, and make into pasties with puff pastry. We usually have them with salad if we want something else with them.

    Zucchini pasta. Grate zucchini (at least one big one, more if you want). Fry with a little olive oil & a clove or 2 of crushed garlic until most of the liquid from the zucchini evaporates. Stir through cooked pasta with finely chopped parsley & mint, grated parmesan & even a sprinkle of slivered almonds. A favourite for all 6 people in our house!

    Fish tacos. Light, easy, healthy. Grill the fish with a splash of lime juice and a pinch of cumin. Flake and serve in warmed burritos with cucumber lettuce tomatoes and sour bream. So yum.

    Greek lamb wraps ( I use falafel for me!) just make lamb kebabs with diced lamb, marinate in lemon, garlic and olive oil , grill , then wrap in mountain bread with tzatiki and Greek salad , healthy and easy ( DS loves them but just eats it all separately as he hasn't got the hang of holding a wrap and keeping it whole yet!)
