    Lightbulb Cookie questions

    Hello can someone help me with these questions I have with regards to making cookies please---

    1.Plain flour or self raising flour? I have seen recipes that use either or both,which is the correct way of doing it?

    2.Brown sugar or caster sugar? Which do I use and how different will the cookies be?

    3.How do I make crunchy cookies like the ones you get in the shops?

    It all depends on what cookies you are trying to make. I even have flourless recipes.
    Is blessed to have 6 wonderful kids.

    The basic cookie dough I usually use, uses -

    385g butter,
    2 eggs
    4 cups plain flour
    1 tsp baking powder

    Makes 125 cookies, and I also have a few variations, just have to add a couple different ingredients.

    Depends what cookies. Something like anzacs need plain flour or anything that you roll out and cut shapes. Things that are a bit lighter and fluffier need SR Flour, so macaroons, etc. Brown sugar gives a bit more of a molasses like taste where as castor sugar is just like normal white sugar. To make the cookies crunchy or soft will be determined not just by the recipe but also the cooking time. For example soft cookies you cook for 10 mins, crunchy you leave a bit longer for say 15 mins or until nicely golden brown. Check out some websites for recipes like:
