We used to go through the alphabet and had to find things starting with each letter.

    number plate game.

You have to make up a silly saying from he letters of the car in front/passing number plates

eg 856 EEL elephants eating lollipops
Is blessed to have 6 wonderful kids.

    * Alphabet using letters from the number plates
    * Car colour bingo - each person would have a different colour car they had to watch out for and the first to get to 5 or 10 wins
    * Punch Buggy - spotting VW beetles
    * Spotting Red Noses on cars - double points for a red nose on a red car

Hmmm, I'm sure there are more will keep thinking.
