    Travelmum what an awesome job! I just called my husband this morning telling him we are going to have to start cutting down on our dinners and all of these ideas are awesome. We are starting with the baked beans on toast for dinner!

    A school lunch my DD loves is
    1/2 packet spiral pasta
    1 BBQ chicken shredded (DD prefers the BBQ chick but you could cook some breast or thigh)
    1 bottle thousand island dressing
    1 finely cubed capsicum
    1 finely chopped celery stick
    2 finely cubed carrots

    Simply cook pasta and while still hot stir through chicken, veges and sauce then refrigerate. I separate into sandwich sized lunchbox containers and freeze some.

    I usually do this as a treat if I pick up a BBQ chick on special.

    Most often I use cheap jar salsa but that's because I'm lazy.

    Super easy salsa: dice fresh tomatoes and a red onion, add some coriander, cumin and a squirt of lime juice. If you like spice add a chili or 2. Mix it all together and let stand for a while (half hour - hour)

    You can use spring onion instead of red onion if you prefer.
