    Default Chicken breast

    Ok, so hit me with your best chicken breast recipes!

    I have 2 defrosting at home and am trying really hard to get back to eating healthy! I was quite healthy before becoming pregnant, now I am just an eating machine

    I usually chop them up and use them in stirfries but that's just not appealing to me. I feel like chicken and veggies but have NO idea what do with the chicken.

    So what would YOU do with 2 chicken breasts?!

    Hi!!

    We sometimes will brown the outside of the breasts... then stick em in the oven & let them roast. Takes about 20 mins to 1/2 hour. Its really yummy. Put some cloves of garlic in with them... mmmm

    Cut a pocket in the breast and fill with low fat philly cream cheese mixed with spinach or chives, coat a pan with oil spray and cook...yumo. You could also crumb them but I find that more oil is needed.

    We love Apricot Chicken. Its super simple and tastes delicious!

    Preheat your oven to 180 degrees.
    Cut up your chicken breasts into cubes or whatever you like.
    In a casserole dish combine 1 can of apricot nectar with 1 packet of french onion soup.
    Add chicken to dish and ensure that all the chicken pieces are covered with the nectar mix, and spread out evenly.
    Cover dish with lid or foil and bake for 1 hr.
    Remove dish from oven and add 1 can of drained apricot halves.
    Stir to combine, then put back in the oven for another 5-10 mins.

    Serve with rice and steamed vegies. Yummy!

    chicken parmesan

    just cut up the chicken into strips and put in into a baking dish
    sprinkle parmesan cheese over it
    add a whole jar of chunky bolinase(sp?) sauce

    leave in the fridge and take out an hr before u want it ready
    sprinkle more parmesan cheese and normal cheese on top

    yuumy

    I like to chop it into slices/pieces/chunks (whatever takes your fancy) and brown it in a big frypan with sliced onion, sliced capsicum, heaps of garlic, and heaps of Italian-style herbs (oregano, basil, etc) Then I pour in a tin of tomatoes and a few dollops of tomato paste (or, alternatively, a jar of pasta sauce) and then just simmer until the sauce is thickened. Serve over rice, or pasta, or with mashed potatoes, or just on it's own with lots of crusty fresh bread (or even better, garlic bread).


    But I am SO doing my next chicken meal with the philly and spinach inside... mmmmmmMMMMMMMM that sounds so delicious!! Thanks Maddy'smama!!

    I love to cut them up & skewer them & pour over some sweet chilli sauce or honey/soy & garlic, leave to marinade for a couple of hrs & then cook on the bbq in a bit of olive oil, healthy & yummo!!! I serve with rice or caesar salad!!! Making me hungry!!!

    Mix up some soy sauce and honey (or BBQ and honey) marinate the breasts for as long as you can and then put them in the over on a tray for about an hour (it roasts the outside with the marinade and leaves the inside all moist and yum) Add vegies and YUMO!
