I haven't done Pork but thought my lamb experience might help
I cooked lamb in our slow cooker last night. I browned the outside in a pan first with all my seasoning stuffed into slits in the meat. Then put it in the slow cooker on high for 5 hours with a bit of water in the bottom of it that we used afterwards to make the gravy from.
Some people I know roll up balls of tin foil and put it under the meat so its not sitting in the fat/juices but I dont really see the point.
After it was cooked we put it in the oven for 15 minutes to 'crisp up' the outside if that makes sense? It was divine! Yum yum, will def do it again! My DF is a chef and he loved it too![]()
I do roast pork in the slowcooker, but I have NO idea how you'd get crackling this way
When the roast is done, the fat just falls off in one piece, so maybe you could salt it (just the fat) and put it into the oven or grill to get the crackling??
Only cooked roast pork in the slow cooker once & it was sooo yummy.
Last time I cooked a pork roast in the oven the crackling didn't crackle all that much so I just cut the skin and a bit of fat of & put it under the grill for a few minutes. make sure u keep an eye on it cause it burns pretty quick if u have the grill too high.
Guess u could just cut the skin & a bit of fat off, oil & salt it then place it under the grill.
I've also heard of ppl cooking crackling in the microwave but could never get it to work myself.

I would guess that you'd have to do the crackling seperately as it needs a high heat to make it hard and crunchy. I don't know how the roast will go in the slow cooker because of the fat. I've got a slow cooker cookbook that says that fat and slow cookers don't go together well and it should be removed prior to cooking.
