OK, I'm going to answer my own thread which is probably not the done thing. But I have just found this great website that has every imaginable favoured cupcake recipe so I thought I would share it.
Would still love to hear from anyone about any yummy tried and tested recipes.

I've found Nigella's recipe to be the best one I've tried. I made a cupcake tower for Eloise's birthday. I made about three lots of batter, don't just double/triple the recipe, because cakes just don't work like that!

The best standard cupcake recipe I've found is as basic as it gets:
4oz butter
4oz sugar
8oz plain flour
2tsp baking powder
2 eggs
capful of vanilla
splosh of milk
Cream the butter, sugar and vanilla together until fluffy. Continue beating as you add the eggs a bit at a time. If the mixture looks like separating, add a small handful of the flour to recombine.
Once the eggs are in, add the flour - the only trick is not to over-beat once it's in. Just enough to combine, no more. You will need to add some milk to fix the texture as you go along - the mixture shouldn't be liquid, but it should be quite gloppy. Spoon into greased cupcake tins, and bake for about 25 minutes at about 190c
That's your basic mixture - you can jazz it up however you want: cocoa, coconut, raisins (my favourite).... anything.
I'll leave icing to wiser heads than mine (not a fan of the stuff myself)
Thanks guys, I'll keep you updated with how it all worked out. I might just have to do some testing today - God help my ever expanding waistline!
Razzle, thanks for the tip about not increasing the batch size as that was what I was planning on doing. Could have been a disaster in the making already.

I made one of those towers for my sons 1st birthday and I think it looked absolutely awesome!!!
(I won't submit a recipe, as you already seem to have a few!)
I made 3 double batches of cake batter.

Razzle - I made 2 batches of the Nigella cupcakes and they turned out really well. That recipe was too easy as it just gets thrown into the food processor. What a dream - hardly any dishes and prep work. Highly recommend that recipe! Thanks![]()
