    Default COCONUT ICE, help!!

    Hi

    I made, or tired to last night.

    and it has set but isnt coconutty. its not dry enough iykwim?

    So does anyone have a good recipe they can walk me thru?

    Its for my mum, its her bday today and she loves it!!

    I wish I could help but everytime I try to make coconut ice no matter which recipe I follow it never turns out! It always stays soft and gooey!


    I am thinking it might be the same as when you make things like fudge the weather can effect the result of it turning out.

    Hi Mel
    Heres a recipe from the edmonds cookbook from home (NZ) haven't made it myself, but everything else I've made from this one has been fabulous.
    4c icing sugar
    1/2 c milk
    2T butter
    1/4 t salt
    1c coconut
    few drops red colouring (if you like)

    put icing sugar, milk, butter & salt into pan. Heat gently stirring till sugar dissolves. Then boil without stirring. Let boil till forms a soft ball. (To test drop a small amount of mixture into cold water- when it forms a soft ball its ready). Add coconut. Remove from heat and cool 10 mins. Beat until it thickens. Poor into a buttered tin and cool.
    If you want divide mixture in 2 before beating and add red colouring to one portion. Beat pink first and put into tin then beat and spread white on top.

    Can't go wrong with the Edmonds Cookbook - does anyone in NZ NOT have one? I actually have two!! (the regular one, and an illustrated version)

    Anyway, back to the important stuff, I've made coconut ice a few times, and the only tip I have is to make sure you beat it long enough, and it really starts to go quite thick. Then it seems to set quite well (sometimes too well - I've over-done it a couple of times, and then the pink and white layers haven't stuck together).

    So, bottom line is, it's kinda tricky, so best of luck!!

    mmmm coconut ice ive been craving that lately might try that reciepe some time aswell. Im surprised the reciepe doesnt ask for condensed milk ive always heard of it being made with that

    Yes I too am suprised it dosn't have condensed milk in it! Perhaps the condensed milk is the reason mine never turn out?

    I have always made it with 1 tin condensed milk, 3 1/3 cups icing sugar and 3 cups of coconut. I did try it some other way but it tasted really sugary and didn't set properly so with the condensed milk its simple and quick.
