How about going shopping, letting him pick out a toy and offering his dummy as 'payment' for said toy and handing it over to the cashier.

I tried cold turkey with my twins but the tantrums and screaming for the dummies x2 were just too much for me.
What I ended up doing was using those water filled teething rings. (nice and cold ones) Whenever they screamed for their dummies I would offer those instead. They could chew on them but they couldn't just walk around the house with them hanging out of their mouth. Not if they wanted to play with 2 hands anyway.
