I was wondering if anyone had a recipe for muffins, from scratch. My DH loves them, but the pre-packed mixes are putting a bit of a dent in the budget.

I make the Just Right bread recipe, but make it into muffins instead, and freeze them. DH used to take a Brunch Bar to eat on the way to work, now I take a muffin out of the freezer the night before and "hey presto", lots cheaper and easier.
If you're making muffins from a bread recipe they don't need cooking for as longSorry if I'm stating the obvious.

I LOVE these muffins and there is no dairy/egg in them so perfect if your have family members/friends with allergies. Yum yum yum!! substitute the banana for other fruits of the same quantity..... i find tinned fruit salad ones are actually quite nice too.... tangy
egg free muffins... you could make them, they're dairy free too and pretty much foolproof... can't taste the difference either! Make em banana, apple and cinnamon or whatever you want! here's the banana version!
2.5 cups SR flour
90grm nuttalex (found in the butter section of the supermarket, it's dairy free)
1 cup castor sugar
1.25 cups water
2 mashed bananas
-Sift flour
- rub in butter
- stir in sugar/water
- mix well
- stir in banana
- use mini muffin tray (or heck, the big ones! - this recipes from my centre hence the mini!)
- cook 180*C for 30 mins (or until cooked)
