    Default Leftover roast chicken - What can I do for dinner?

    Anyone have a recipe to use up leftover roast chicken?

    I don't have the motivation or inspiration to work it out for myself tonight and the hungry mob is calling (well me and DH )

    I usually put that kind of stuff on toasted sandwiches. I'll add tomato or anything i have in the fridge.
    Or you could make a nice chicken salad! I don't know if that helps.

    Mmmm I saw a beaut recipe in Super Food Ideas for leftover roast chicken.

    Simply roast a tray of vegies eg potoatoes, sweet potoato, pumpkin, carrot - whatever you have on hand and then when cooked put in a bowl and toss through some fresh spinach leaves, shredded roast chicken and your fav dressing like ranch or something and Wa La!

    Chicken Pasta Salad...

    Boil some Pasta, shred chicken, add some mayo and what ever other tid bits you like...sweet corn, grated carrot, capsicum - what ever is in the fridge.

    OR

    If it is cold where you are - I'd do a chicken and sweet corn soup. Shred chicken, pop in pot with a can of creamed corn, chicken noodle soup and just B4 u take it off the stove stir in 1 egg.

    Put in baking dich, the roasted chicken, chopped capsicum, mushrooms, red onion. Combine a can of Campbells Cream of Chicken and Corn soup, and a quarter cup of sour cream. Pour this over the chicken and stuff, grate cheese on top then bake at 180 C for half an hour. Yum. It's our slack meal when we get takeaway, a roasted chicken from Red Rooster and I make this.

    Home made pizza (if you have pizza bases or pita bread). Add chopped chicken and whatever is in the fridge - pineapple, herbs, cheese, bbq sauce, capsicum, mushrooms etc.

    I usually shred the chicken, chop up some ham, mushrooms, anything really, cook some pasta, make a white sauce. Then mix it all together, chuck it in a baking dish top with grated cheese and into the oven

    I usually shred it up and boil some pasta and add all this with a jar of stir through pasta sauce. hmmm yummy.
