    I make these muffins for myself. I can't tell you they're really yummy because they're not but they do satisfy my yearning for a muffin and would be very low in fat and calories.

    1 cup SR flour
    2 cups bran
    good pinch baking powder
    mixed spice
    3/4 cup brown sugar (raw sugar is ok too)
    2 ripe bananas (puree with stick blender)
    180ml apple sauce (approx)
    2 beaten eggs

    Preheat oven to about 180. Mix dry ingredients in bowl. In separate bowl mix wet ingredients.
    Mix all together with big whisk or blender. Use the mini-muffin trays (should make about 36). Spray trays with non-stick spray and spoon into each. Cook for about 10-12 mins or until firm.

    I'm still experimenting with this recipe - let me know if you have any suggestions for improving or making alternatives. When I get some time I'm going to try making an apricot version.

    Taste.com has stacks of awesome muffin recipes.. You can adapt your own as well, just use a plain muffin base and add whatever veges/herbs/fruit that you want.

    Slices are realtively healthy if you chose ones that don't have chocolate and the likes in them.

    The above site has heaps of recipes for them as well.

    I've made DD ABC mini-muffins before, and as far as muffins go, they're pretty good.

    Apple Sauce, Bananas and a tiny bit of finely grated dark chocolate... and I used wholemeal flower...

    I'd say get yourselves some healthy-eating cookbooks, or some kids cookbooks (I enjoyed the mini muffins I made for DD too...lol)... and go from there!
    I've now lost 36kg thanks to the gastric sleeve!

    A plain piklet batter or plain muffin mix then just add heaps of grated veges and if you like maybe some herbs, or a little bit of cheese, maybe some ham or bacon..

    Yummo savoury muffins and piklets..

    If your favorite muffin or cake recipe calls for lots of oil, try replacing most of it with some of with another liquid. Applesauce works well for many muffins. I've used yogurt in some slice recipes.

    I made these just today and they are delicious. Not too sweet.

    Banana Oatmeal Muffins

    1 1/2 cup plain flour
    1 cup rolled oats
    1/2 cup brown sugar
    2 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    3/4 cup skim milk
    1/4 cup apple sauce
    1/2 tsp vanilla extract
    1 cup mashed banana

    Preheat oven to 200C. In a bowl, combine flour, oats sugar, baking powder, soda and salt.
    In another bowl, mix together milk, apple sauce and vanilla. Add the bananas and mix.
    Stir flour mixture into banana mixture until just combined.
    Lightly grease 12 hole muffin tray (not the mini ones). Divide batter among them.
    Bake for 20 minutes.

    In the newsagent there is a series of books called "simply too good to be true" Think they are up to book 5 now. All low fat recipes and one of the books has slices and muffins in it. Each book has entree, mains - fish and meat, vegies, cakes/slices, desserts. The majority of the recipes are also suitable to freeze which is really handy.
