I make these muffins for myself. I can't tell you they're really yummy because they're not but they do satisfy my yearning for a muffin and would be very low in fat and calories.
1 cup SR flour
2 cups bran
good pinch baking powder
3/4 cup brown sugar (raw sugar is ok too)
2 ripe bananas (puree with stick blender)
180ml apple sauce (approx)
2 beaten eggs
Preheat oven to about 180. Mix dry ingredients in bowl. In separate bowl mix wet ingredients.
Mix all together with big whisk or blender. Use the mini-muffin trays (should make about 36). Spray trays with non-stick spray and spoon into each. Cook for about 10-12 mins or until firm.
I'm still experimenting with this recipe - let me know if you have any suggestions for improving or making alternatives. When I get some time I'm going to try making an apricot version.
